Greek Lemon Potatoes

Lemon Baked Potatoes (Patates Lemonates Fournou)

from Papas' Art of Greek Cooking serves 4-6

Ingredient List:

  • 4 large potatoes (russet)
  • 1/2 cup lemon juice
  • 1 cup extra virgin olive oil
  • 1 tbs oregano
  • 4 cloves garlic, minced
  • salt and pepper to taste
  • paprika

Oven: Preheat oven to 425F

  • Peel and wash the potatoes, cut them lengthwise into quarters and place in a bowl.
  • Pour the lemon juice over them and toss. Add the salt, pepper, minced garlic, oregano and oil. Mix well.
  • Allow to marinate for an hour or more.
  • Arrange the potatoes in one layer in a baking pan. Pour over the marinade and sprinkle paprika on top.
  • Cover the pan tightly with foil and put on the lower rack of the oven. Bake for approximately 25 min, initially.
  • Uncover and bake another 30 min or until the potatoes are tender and crispy on top.
  • Remove from the oven and serve hot.

Notes:

So good they are delicious cold the next day, as well. Honestly, you should use even more lemon, maybe 3/4 cup. Also, salt them enough.
