Baked Pumpkin Seeds

This is from an old edition of "Joy of Cooking" because they decided to change to only one different method. What was wrong with this method? I like it better:

To bake seeds:

Separate winter squash seeds from the strings but do not wash. Toss the seeds with 1 tbs vegetable oil per 1 cup seeds [maybe a half that] and a little salt. Spread seeds on baking sheet and bake at 250F until dried (about 1-1/2 hours). The seeds may then be seasoned and toasted in a 350F oven (about 5 or 6 minutes, don't burn them!)
